Blueberry and White Chocolate Muffins


 

Gudiya's school has started. I baked these muffins as her first day after-school snack. This recipe is inspired by Bob's Red Mill using whole grain pancake/waffles mix. I used 10 grains pancake mix - hoping that it will include more health benefits for my growing girl.

Blueberry & White Chocolate Muffins
Ingredients
2 cups 10  Bob's Red Mill Grain Pancakes/Waffle Mix
1 cup milk

Whisk
1/2 cup sugar
1/2 cup Applesauce
2 tbsp. vegetable oil
1 tsp. vanilla extract
1 cup milk
1/2 tsp. cinnamon powder
1/8 tsp. nutmeg powder

Stir in
1/2 cup dried blueberries
2 tbsp. white chocolate chips
1 tbsp. pancake mix

Method
1. Preheat oven 350 F
2. Whisk sugar with all the ingredients till nutmeg.
3. Stir in pancake mix and milk. Do not over mix.
4. Add berries, chips mixed with flour.
5. Divide the batter in 12 big muffins cups.
6. Bake for 20 - 25 minutes.
7. Serve warm.

Note -
1. This pancake mix has wheat, corn, soy, chia, rye, millet, oats, flours.
2. I mix berries with little flour so berries do not sink in the muffins.
